Baked Goats Cheese Tartlets

1.
Place the tartlet bases on a baking tray ready to be filled.
2.
In a bowl combine the eggs, sour cream and a little seasoning.
3.
Place a little Wood’s Green Tomato Pickle in the base of each tartlet case and top with the goat’s cheese.
4.
Carefully pour the custard mix over each tartlet.
5.
Place in a preheated oven set at 160˚c for 10-12 minutes.
6.
While the tartlets are baking, heat the Wood’s Red Capsicum Relish in a sauce pan (if desired, puree with a bar-mix).
7.
Pour the sauce on the base of your serving and top with the cooked tartlets. Garnish with chopped parsley.
